I wanted to get to processing apple butter. but not this week.
The challenge with homesteading is staying diligent with the rigorous schedule of berries, peaches and pickles and then it is followed by garden fresh vegetables like zucchini, cucumbers, and green beans. I usually get a second picking of green beens so that my stash will last through the full year. Most of the zucchini is fresh vacuumed sealed and frozen for winter. My last big canning effort in the fall is apple butter. So by mid October, apples are considered late at that point and make the best apple butter, applesauce and yummy pie fillings. So this next couple of weeks include vacations and then closing out fall with 'all things apple'.
